You Are What You Eat And He's A Helper!



Every morning Monkey number one requests a poached egg on toast no butter. 
My rule is if you are at the breakfast table before seven you get what you order- After that it's chef's choice, which is usually cereal.
I love poached eggs on pumpernickel with some avocado and lots of pepper.

I love putting pepper on fruit- and this arugula, apple, purple cabbage and feta cheese salad is no exception.
This is a brie, pear, spinach panini- also great with avocado.


I got a huge zucchini at the farmers market and stuffed it with some tofu, left over corn- off the cob, broccoli and parmesan.  After cutting and gutting the zucchini I added salt and olive oil and let it roast on broil for a few minutes then added the stuffing and roasted at 400c for twenty minutes.
We ate it with whole wheat cous cous- mint on the side for those who are offended by green!

And just so you don't think I make my poor monkeys eat healthy food all the time:

Ahem- Hamburger Helper (with turkey)
Mashed cauliflower and beans ( not monkey choice!)

YUM--all that looks delicious, especially the avocado! These days I eat avocados and tomatoes all the time . . . there are so many delicious ones all around the farmers markets! I'm dreading the end of summer produce . . .

The only thing I can see that is lacking, are raisin eyes and an avocado shaped mouth on the poached egg.

Now seriously-everything looks delicious AND nutritious. I am having poached egg with avacado for breakfast tomorrow. Thank you for the inspiration.

YUM! Love all this healthy good food! And your rule about being at the breakfast table by 7 and ordering is pure awesomeness! I put fresh cracked pepper on everything too. It's SO good with avocado!

I USED to make breakfast for my boys. Egg scrambles, pancakes, french toast, but these days the only thing they actually will eat is cereal. Easy, but not much fun!
