Abundance And Apricot Preserve


For it is in giving that we receive

Our friends the K's have an abundantly fruitful apricot tree
They were kind enough to share several bag of apricots with us
One of Dr. J's patients has a pecan tree and he shared some nuts with us

My friend S brought us these sunflowers
What a great reminder to share abundance with others
I decided to make some apricot preserve
I pitted about 2 lbs of  apricots
Because their skin is so thin they do not necessarily need to be blanched and peeled as do peaches
I added the juice of half a lemon as well as some zest from the peel
I melted about 2 cups of white sugar in about an inch of water covering the bottom of the pot
Once the sugar dissolved I added the apricots, lemon juice and zest
Then I simmered it on low, while stirring for about an hour
Near the end I used a potato masher to help break up the apricots
I then let it cool and put it into jars
This type of preserve is considered a freezer preserve
I kept one jar in the fridge for immediate consumption and it will be good for about a month
The other ones are in the freezer and can be taken out and used as needed

wonderful!...the flavors of summer should be preserved and cherished...it's so fleeting for us in Canada. Apricots won't be ready here for a couple more months and my mouth is watering already!

apricots bring special memories of my paternal grandfather and growing up in Mexico..

I didn't realize that it was so easy to make apricot jam. Can't wait to see what you will prepare with the pecans!

Mmm, my mouth is watering over this deliciousness. Once we get a garden going, we're going to spoil our friends and fmily rotten with produce (fresh, not rotten). Right now we don't have much to give out but we are always inviting friends over for a home cooked meal! And yesterday I went into my favorite flower shop to browse and went to buy a single garden rose - they gave it to me for free!!

What great blessings you have received. I love apricot preserve. My mom used to make it when I was a little girl, we would pick the apricots off the tree and she would make the preserve. Awesome. I have never seen what a pecan looks like in its shell, thanks for sharing this. God has blessed me by my art, just the process of creating it... so I like to give out prints to people who have told me they were touched by it.

Oh man, I need you to come over and make me some delicious apricot jam too. Incredible looking stuff. My roomies and I are always sharing lemons with each to make fresh lemonade with- we have a few dozen on hand at all times.
