Spinach

I love cooking with spinach- it is so easy to use and packed full of many health benefits.
Spinach is a great source of vitamin C, Iron and has antioxidants that can help prevent cancer.

Here are two easy meals I made- both are suitable for breakfast, lunch or dinner.
The first one is actually a leftover dish- I had a few crepes left over from a breakfast meal we made so I wilted some spinach with salt and a pinch of nutmeg and layered it:

I added a layer of Canadian Back Bacon- just gave it a quick turn on a non-stick frying pan
Made a béchamel sauce (just google a recipe)
And came up with this deliciousness: 

I love making egg Frittata-
Here I used sauteed mushrooms, wilted spinach and Brie 
Add whisked eggs, cream and salt
pour over top of other ingredients and cook on low heat with a lid on

Those both look AMAZING! I usually will cook up spinach with a little bacon and shallots and then add just a little bit of sour cream to make a super tasty side dish.

They both look utterly delicious to this spinach fan. I sometimes make cheesey yorkshire puddings with finely shredded spinach mixed through - they are tasty and exotically green.

That fritata looks especially yum. I throw TONS of spinach into smoothies. we also like it in salad. I think our family prefers it raw to cooked for the most part.

My favorite thing to do with spinach is shabu shabu. Of course, I only dip the spinach in for a couple of seconds.

We love it in salads and also sauteed with shallots and bit of bacon.

Brie and spinach?! You have my heart! And my stomach! These look delicious...and surprisingly so easy! I love a good spinach salad and love putting spinach in my omelettes.

I heart spinach. I love just blending raw spinach with a little olive oil and some cheese (cream cheese or creamy goat cheese) and use as a topping/sauce on warm pasta.

you're making me so hungry! i love spinach in any form. it's actually a "secret" ingredient in the smoothies i make for my lil guy since he's not a big fan of "leaves".
