Off With Their Heads




Roasted garlic paste is a staple in our fridge.  I add is to anything and everything- A dollop to a dish can really add a nice subtle punch.  I also eat it on toast because love it that much.  It keeps well in in the fridge, in a clean glass jar, for weeks.
My grandmother swears by a few things-garlic, honey and vinegar being at the top of her list- she's 88. 
It is super easy to make: chop the heads off a bunch of garlic, add olive oil that's been salt and peppered throw some chopped rosemary on top, cover with foil and roast at 350 for about an hour.



Pop them like pimples and give them a stir to make it into a paste.

This is one of our most favorite things to eat (we're having it tonight). We spread it on thinly sliced toasted bread with a little goat cheese and olive oil, simply divine. I've never roasted it with rosemary but I will be trying that next time for sure!
Also, I posted about honey today! Funny.

yuuuuuum! we want to try this and the gazpacho recipe. perhaps the garlic paste and some good bread w/your gazpacho as a meal...glad to see you are back from brazil.

I love to add garlic everywhere, but never tried to roast it (why?), I feel like buying a whole bunch of garlic and try your recipe!

DrollGirl- You should try it- quickly before having your oven on for an hour is killer!
Nancy- I have only had to throw it out once and I've been doing this for many years- Over a month- but like honey use a clean utensil each time.

This reminds me of two summers ago when I got a TON of garlic from a co-op and roasted it. It was soooo good!

you are such a good cook and your photos of the foods are awesome. unfortunately i only cook for company/parties b/c i have picky kids, picky husband and me gluten free. what a fun family, huh? hahah but the recipes you post are always so simple and easy that it doesn't intimidate me or think i need to wait for company so thank you for that! plus even if i don't make them right away, i'm the kind of person who loves to read cookbooks especially when they have great pics, and yours are like that. :)
